VEAL MOZZARELLA
INGREDIENTS
4 Veal Steaks 2 cloves garlic ½ tsp oregano 1 tbsp chopped parsley 1 onion 2 tbsp lemon juice 2 tbsp oil 60 gr butter 1 tbsp oil extra 2/3 cup grated mozzarella cheese 2 tbsp grated parmesan cheese
SAUCE
30 gr butter 2 tbsp plain flour 1 1/3 cups milk ½ cup cream 125 gr button mushrooms salt & pepper to taste
METHOD
Remove any fat from veal steaks, pound steaks out thinly. Place steaks in glass or china dish in single layer. Combine crushed garlic, oregano, parsley, peeled and sliced onion, lemon juice and oil in bowl. Mix well. Pour marinade over steaks and stand for 2 hours. Drain steaks and pat dry with absorbent paper. Heat butter and extra oil in pan, add steaks and cook on both sides until browned. Remove steaks and place in shallow ovenproof dish in single layer, pour sauce over steaks and sprinkle top with combined cheeses. Bake, uncovered in moderate oven (180°C/356°F) for 30 minutes.
TO MAKE SAUCE Melt butter in pan, add flour and cook 1 minute, stirring constantly. Add milk and cream, stir until sauce boils and thickens. Add thinly slice mushrooms, salt and pepper, simmer, uncovered, 1 minute.
